Favorite Texas Brisket

6 lbs beef brisket
1/2 c vegetable oil
1 can beer
1 clove garlic, minced
2 T lemon juice
2 T salt
3 whole cloves
1 envelope dry onion soup mix

Marinate brisket overnight in a mixture of all ingredients except dry onion soup mix.
Discard marinade. Sprinkle top of meat with soup mix.
Wrap meat tightly in foil.
Bake 4 to 5 hours at 275F.

VARIATION II:

6 pound brisket
Liquid smoke
Worcestershire sauce
Seasoned salt
Cracked black pepper

Place brisket on a sheet of heavy-duty aluminum foil.
Rub both sides of brisket with liquid smoke and Worcestershire sauce.
Sprinkle fat side of meat with salt and pepper.
Wrap and seal tightly. Place in a pan.
Bake 1 hour at 450F. Reduce heat to 350F and bake 1 hour.
Reduce heat to 250F and bake 1 hour and hold at this temperature until ready to serve.
